The Penfolds BIN 707 Cabernet Sauvignon 2019 is a meisterwerk of Australian winemaking and is one of the most exclusive and sought-after Cabernet Sauvignons in the world. It stands for uncompromising quality, powerful elegance and exceptional longevity. As a single-varietal Cabernet Sauvignon, this wine is only produced in outstanding vintages and is sourced exclusively from selected vineyards in South Australia such as the Barossa Valley, Coonawarra and McLaren Vale.
This wine clearly focusses on one grape variety – 100% Cabernet Sauvignon – and impresses with its maximum expression and structure. Only the best grapes are used for the BIN 707. After the selective harvest, the grapes are quickly transported to the winery, where they are gently processed, fermented in small wooden barrels and then aged for 20 months in new American oak barrels. This careful process preserves the aromatic depth and supports the complex development of the wine.
Tasting NoteDeep, opaque purple-red colour with a dark core. The nose reveals complex aromas of blackcurrants, blueberries, coffee and mocha, underpinned by mineral notes and fine wood. On the palate, the wine is dry, powerful and multi-layered, with dense fruit, precise acidity and a velvety tannin structure. The finish is long, concentrated and characterised by noble spice – a red wine with impressive depth and ageing potential.
Ideally served at 15-18 °C.
